HAPPY NATIONAL PEANUT BUTTER DAY!

 National Peanut Butter Day on January 24th recognizes an American staple in our pantries. Whether creamy or chunky, with chocolate or with jelly, peanut butter gets the recognition it deserves each year on this day! 

Some ways to celebrate this delicious holiday:

First, make a peanut butter snack! This one is super delicious:


Peanut Butter Banana Bread:

Ingredients:

Cooking Spray

1 3/4 cups of four

1 teaspoon of baking soda

1 teaspoon of ground cinnamon 

1/4 teaspoon of fine salt

1 cup smooth peanut butter

1/2 cup of of packed light brown sugar

1/2 cup of granulated sugar

1 large egg

1 teaspoon of vanilla extract

3 very ripe mashed bananas 

Glaze Topping:

1/3 cup smooth peanut butter

3 tablespoons unsalted butter

1 tablespoon of confectioners sugar

3 tablespoons of honey roasted peanuts 

Directions:

Preheat oven to 350 degrees F. Spray a 9 by inch loaf pan with cooking spray.

Whisk together flour, baking soda, cinnamon and salt in medium bowl.

Beat together peanut butter, brown sugar and granulated sugar with electric mixer on medium- high speed in large bowl until smooth. Beat in egg and vanilla, then fold in the mashed bananas. Add the flour, mixture, and beat on medium low and just combined.

Transfer batter to the prepared loaf pan and bake until bread is golden brown and has split at the top and a toothpick in center comes out clean, 1 hr  20 minutes.

For glaze, when bread is cooled, combine peanut butter, butter and confectioners sugar in medium microwave safe bowl and microwave in 30 second increments stirring after each, until smooth. Let glaze sit until it has stiffened a bit but still spreadable. Spread over top of bread and sprinkle peanuts on top. Let sit for 10 minutes before slicing.
